Our Saperavi salami is a rich, peppery salami made with garlic pepper and wine.
Saperavi wine from renowned Pheasant’s Tears Winery enriches spiced shoulder meat in this salami. The meat begins its fermentation overnight before it is stuffed into beef middle casings and hung at 22 degrees for a 72 hour fermentation. Afterwards, it is placed at 12 degrees to mature and dry for 2-6 months. This product is savoury, rich and meaty, with a hint of garlic, a peppery bite and the rich flavour of Saperavi.
