A meat spread set in a jar, can be served cold or cooked for a pulled pork like product. Slow cooked pork with onion, garlic, pepper, bay and thyme, then shredded and jarred.
Whole shoulders of pork, on the bone, are slow cooked for 20 hours, submerged in fat, with whole onions, garlic, bay, pepper and wild thyme. After cooking, it is removed gently from the fat, and slowly pulled apart and shredded. Finally seasoned, it is packed into jars, topped with a protective layer of fat and sterilised. This meat will last for at least a year, slowly developing in flavour. Rich, smooth and meaty, this is amazing on hot toast with pickles, or can be cooked as a base for a pasta sauce or mixed with spices for barbecue pulled pork.
