Chorizo
Saidanaa chorizo is a delicious sausage made with paprika and chilli, fennel, garlic, and Saperavi wine from Pheasant’s Tears.
The meat first ferments overnight before it is stuffed into beef middle casings and hung at 22 degrees for a 72 hour fermentation, then placed at 12 degrees to mature and dry for 2-6 months. Smoky, sweet and spicy, this salami is amazing on a pizza, in a sauce, or just sliced and eaten on its own. Full of bold flavour!
