Rump/sirloin cured with just salt and aged for 3+ months. The rump and sirloin is simply cured with just salt and matured for a short
period. This is a slightly sweet, simple ham with a thick layer of meat
topped with a thin layer of buttery fat. An easy, light, prosciutto like ham
perfect on a meat board, layered on a pizza or packed into a sandwich.
